In the spirit of embracing foods that are whole, nutritious and (most importantly) not nasty, I want to share the quickest, simplest and (most importantly) tastiest breakfast idea ever. Parfaits are literally like a dessert for your morning routing, minus the guilt that comes with a mountain of Blue Bell or a glob of cookie dough.
A handful of blueberries
Granola (I use the Special K brand)
Vanilla yogurt (I use fat-free Dannon Oikos Greek Yogurt)
Grab a spoon, and scoop two big dollops of yogurt into a bowl. Sprinkle a handful of granola on top, slice up a peeled banana and layer the slices over the granola. Wash a handful of blueberries, and toss them on top. Clean excess yogurt off spoon with mouth (yum), then dig in.
You get it. It's easy. However, sometimes in the mix and mash of life, we forget to be good to ourselves. We also forget how easy and quick being good to ourselves can be. Treat yourself to a parfait, some self-love and bundles of grace. Happy morning-ing, frannns!
PS- If you're feelin' patriotic, add some fresh strawberries or raspberries.
